Broccoli Hemp Seed
Broccoli & Hemp Seed
1 head broccoli chopped, about 3-4 cups
2 tbsp coconut oil
2 green onion, sliced
2 cloves garlic, chopped
1 tbsp ginger fresh, grated
1 tsp red pepper flakes
salt & pepper to taste
1 14oz can organic white beans
small handful cilantro
small handful parsley
small handful walnuts, soaked overnight
1/4 cup hempseed
1 lime
4 cups vegetable stock, bone broth, or water
Instructions
Chop onion, garlic, and ginger
Saute the green onions in coconut oil over medium heat 3-4 min. Then add ginger and garlic, and pepper flakes
Saute everything for another 2-3 minutes over medium heat, then add walnuts and chickpeas
Add the broccoli, water or stock, bring to a boil, then simmer 25 minutes.
Add hemp seed, cilantro, and parsley.
Puree soup with an immersion or countertop blender
Season with salt and pepper
Serve with a squeeze of lime
