Broccoli & Hemp Seed

  • 1 head broccoli chopped, about 3-4 cups

  • 2 tbsp coconut oil

  • 2 green onion, sliced

  • 2 cloves garlic, chopped

  • 1 tbsp ginger fresh, grated

  • 1 tsp red pepper flakes

  • salt & pepper to taste

  • 1 14oz can organic white beans

  • small handful cilantro

  • small handful parsley

  • small handful walnuts, soaked overnight

  • 1/4 cup hempseed

  • 1 lime

  • 4 cups vegetable stock, bone broth, or water

Instructions

  • Chop onion, garlic, and ginger

  • Saute the green onions in coconut oil over medium heat 3-4 min. Then add ginger and garlic, and pepper flakes

  • Saute everything for another 2-3 minutes over medium heat, then add walnuts and chickpeas

  • Add the broccoli, water or stock, bring to a boil, then simmer 25 minutes.

  • Add hemp seed, cilantro, and parsley.

  • Puree soup with an immersion or countertop blender

  • Season with salt and pepper

  • Serve with a squeeze of lime
