Carrot & Ginger Soup
1 lb carrot, chopped
3 tbsp olive oil
1 small onion, chopped
3 cloves garlic, chopped
1 tbsp ginger fresh, grated
1 tsp turmeric fresh (prefered) or powder
1 tsp cumin
1 tsp cardamom
small handful cilantro
1/2 tsp black pepper ground
1/2 tsp kosher salt
4 vegetable stock
Instructions
Peel and chop the carrot, onion, garlic, and ginger
Saute the onions in oil over medium heat 3-4 min. Then add ginger, garlic, cumin, cardamom, turmeric, pepper
Saute everything for another 2-3 minutes over medium heat.
Add the vegetable stock, bring to a boil, then simmer 25 minutes.
Use an immersion blender to puree the soup
Add cilantro and sprinkle salt and blend a few seconds more
Serve with hemp hearts, pumpkin seeds, or crushed red pepper if you'd like.
